Los Trapiches Decaf

Lime / Dark Chocolate / Brown Sugar

3FE have had Los Trapiches on their list before and jumped at the chance to bring it back as their decaf. Decaffeinated at source in Colombia using a raw cane sugar process, which 3FE reckon is the least invasive method and one that actually adds to the natural sweetness. Smooth and easy drinking. Lime cuts through the dark chocolate and brown sugar, keeping it bright.

Mexican La Laja Decaf

Chocolate / Lemon / Lemon Drizzle Cake

Award winning, and you can taste why. The Guild of Fine Foods described it as reminding them of lemon drizzle cake, which is about right. Chocolate and lemon in a harmony that shouldn't work but does, with a light chocolate finish and a bright, clean aftertaste. Mountain Water decaffeinated from Huatusco in Veracruz, Mexico. Caturra, Cirollo, and Bourbon beans, washed and roasted in small batches weekly.

Guatemala Finca Los Humitos CO2 Decaf

Kiwi / Butterscotch / Brazil Nut

Grown in volcanic soil near Lake Amatitlán in Guatemala, where the Pacaya volcano makes the ground rich enough to support five different bean varieties. Fully washed, then CO2 decaffeinated. The CO2 method is precise. It targets caffeine molecules specifically and leaves everything else alone. Kiwi, butterscotch, and brazil nut. An unusual set of notes, and a welcome break from the chocolate and caramel norm.

Chambaku Decaf

Red Berries / Honey / Raw Cocoa

Not your standard washed decaf. These Castillo beans from Caldas, Colombia are fermented anaerobically and dried naturally before decaffeination. That extra work shows. More acidity, more fruit, and more complexity than you'd expect. Red berries and honey sweetness up front, raw cocoa underneath. The Roasting Shed pride themselves on their decaf offering, and Chambaku is the proof. Anaerobic natural processing in decaf is rare. When it's done this well, you wonder why more roasters don't attempt it.
