Not your standard washed decaf. These Castillo beans from Caldas, Colombia are fermented anaerobically and dried naturally before decaffeination. That extra work shows. More acidity, more fruit, and more complexity than you'd expect. Red berries and honey sweetness up front, raw cocoa underneath. The Roasting Shed pride themselves on their decaf offering, and Chambaku is the proof. Anaerobic natural processing in decaf is rare. When it's done this well, you wonder why more roasters don't attempt it.
