Popayan decaf from the Cauca department of Colombia. The Meseta de Popayán sits at 1,700 metres, sheltered by the Andes, which creates the kind of stable, warm microclimate that coffee plants thrive in. Castillo and Caturra from the Popayan cooperative, grown between 1,500 and 2,000 metres. Washed and EA decaffeinated. Honey, malt, and chocolate. The malt adds a depth that rounds the cup out and stops it tasting one dimensional. Well balanced throughout.
