From Wilton Benitez in Cauca, Colombia. Benitez is known for pushing boundaries with fermentation, and this lot shows why. The cherries are inoculated with saccharomyces pastorianus yeast during a 48 hour fermentation, then dried slowly over 88 hours to lock in what that process creates. Sugarcane EA handles the decaffeination. Strawberry jam and milk chocolate dominate, with a confectionery sweetness running through the whole cup. Vibrant and complex in a way that most decafs don't attempt.
