Hand picked cherries, fermented for 48 hours with a specific yeast strain (saccharomyces pastorianus) to amplify the natural fruit character, then slowly dried over 88 hours before sugarcane EA decaffeination. The experimental processing is where the interest lies. Haribo sweets, strawberry jam, and milk chocolate. That reads more like a sweet shop inventory than a coffee spec, but when this much work goes in before decaffeination, the complexity follows. From Cauca, Colombia.
